----------------------------------
I had another dentist appt this morning (crown prep) so Chip "did school". Made a big pot of what the kids (very) affectionately call Mush Soup for supper along with a couple loaves of homemade bread.
----------------
Mush Soup
It's really just a simple pureed vegetable soup - French style. When I
make it, I make a ton because we love it so much left-over. I play with
the seasoning at the end to make it just right, but I really couldn't
say exactly what I do. Doesn't everyone make soup by feel?
I start with water (about 5-6 quarts), of course. Then I chop up and add:
* 5 lbs potatoes
* 1 cabbage
* 1 lb carrots
* 2 or 3 celery stalks
* 1 onion
* a bunch (or 2) of broccoli (if I have it)
* 3 or 4 leeks
* some green onion (6 or so)
* garlic (plenty :-))
* fresh parsley (or dried)
* 3 tsp salt
* fresh cracked pepper
Simmer all of the above together for an hour to an hour & a half.
Blend well in small batches. When all pureed, add a large (30 something
ounces) can of tomato sauce, stir in well. Keep soup on low heat while
tasting and tweaking seasoning (I add quite a bit more salt). Serve with a bit of grated cheese (optional) and
crackers... or better yet, fresh homemade bread.
