We have been picking and drying lots of lemon balm (that is what the girls are taking off the stems in the shot above) and peppermint lately for all those wonderful winter teas. Lemon balm has some antiviral properties (and is great for head and stomach aches, also!) and I love making a tea with it and elder flowers, rose hips and a pinch of mint. I let it all steep in the French press for 20 - 25 minutes. Simply heavenly.
